Traditional Korean soy sauce is made only with soybeans, salt, and water. If you're not used to the taste, you may find it a little rough on the palate and saltier than the regular soy sauce (often with additives) you're used to. It is full of natural savory depth, enough to replace fish sauce to make vegan kimchi. This is used mainly to season soups and stews, but can also be used for all-purpose cooking if you are willing to make adjustments to use less, add water and/or sweeteners to make the taste comparable to regular soy sauce.

Sweet potato glass noodles are the go-to glass noodles in Korean food. The soft-chewy texture is distinctive for glass noodles made with sweet potato starch (compared to glass noodles made with mung bean or rice more common in other countries). Its most well-known dish is Japchae, but it can also be used for dumpling filling and added to soups.
